Shionone synthase explained

Shionone synthase
Ec Number:5.4.99.46

Shionone synthase is an enzyme with systematic name (3S)-2,3-epoxy-2,3-dihydrosqualene mutase (cyclizing, shionone-forming).[1] This enzyme catalyses the following chemical reaction

(3S)-2,3-epoxy-2,3-dihydrosqualene

\rightleftharpoons

shionone

The enzyme gives traces of four other triterpenoids
