Pasta allo scarpariello explained

Italian: Pasta allo scarpariello is a pasta dish from the city of Naples and the town of Aversa, in Campania.[1] [2]

It is typically made with spaghetti, tomatoes, Italian: [[pecorino romano]], Parmesan, basil, chili pepper, extra virgin olive oil, garlic, and salt. In Campania, it is also made with Italian: [[scialatielli]] pasta and yellow tomatoes.[3]

Its name literally means 'shoemaker's pasta',[4] referencing an earlier time in the history of Naples when a shoemaker or cobbler might have been paid in-kind with a meal rather than cash.[5] [6] [7] The word for cobbler is Italian: scarpari in Neapolitan language.
