Cucumisin Explained

Cucumisin
Ec Number:3.4.21.25
Cas Number:82062-89-3

Cucumisin (euphorbain, solanain, hurain, tabernamontanain) is an enzyme.[1] [2] [3] [4] [5] [6] [7] This enzyme catalyzes hydrolysis of a wide range of proteins. It has been identified as an allergen in humans.[8]

This enzyme is isolated from the sarcocarp of the musk melon (Cucumis melo).
